For us, that’s the Prechistensky Cheese Factory in the Yaroslavl region—parts of a tour of which appear in this article. Pizza mozzarella must be firm, stretchy, and elastic. It must also keep well without brine, withstand peak temperatures, and melt beautifully. To ensure this consistent quality across hundreds of pizzerias, a special approach is needed—and that’s what we’ll tell you about.
Dodo’s pizza mozzarella contains butter, casein, and curd made from natural cow’s milk. It contains no starches or vegetable fats—only premium dairy ingredients. Moreover, our supplier’s laboratory tests every batch for aroma and taste and screens for composition anomalies, such as antibiotics. Butter, casein, and curd travel through closed pipelines to the cheddaring stage—a mixing and cooking process in a melting kettle at 72°C for 20 minutes. This produces a fibrous mass with a dense structure. A dosing machine then portions it into ‘sausages,’ which are sealed and sent to a water bath to cool, making the cheese firm yet tender. Once cooled to the right temperature, the cheese is grated into crumbs and sent into a drum where it’s flash-frozen so the granules don’t stick together. The result is a free-flowing product that’s easy to use in pizzerias.
